  • Gnocchi
  • 300g mushrooms, chopped evenly
  • 1 onion, finely chopped
  • 2 shallots, chopped
  • 6 cloves garlic, minced
  • 1 tsp chilli
  • 1 tbsp tarragon
  • 1 shot brandy
  • 1 cup vegan cream
  • 1 tsp salt
  • 1 tsp black pepper

Steps

  1. Cook the gnocchi according to package instructions.
  2. Heat the wok over a medium heat with a little oil.
  3. Sauté the mushrooms, onion, shallots & garlic until onion is translucent with the chilli & dried tarragon.
  4. When the mushrooms are golden, de-glaze the pan with the brandy.
  5. When the alcohol has cooked off, add the salt, pepper & vegan cream.
  6. Let the sauce bubble away and thicken up for 4-5 minutes.
  7. Transfer the gnocchi to the sauce and coat the gnocchi in the sauce.
