Potato and lentil soup
Ingredients
- 1 onion, diced
- 2 shallots, diced
- 5 cups water
- 1 vegetable stock cube
- 1 ¼ cup red lentils, rinsed
- 2 potatoes, diced
- 1 ½ tbsp paprika
- 2 tsp onion powder
- 2 tsp garlic powder
- Salt and pepper
- 2 tsp balsamic vinegar
- 1 cup coconut yogurt
- 3 slices bread
Steps
- Heat the wok on medium and add some oil. When hot, add the onion and sauté until golden.
- Add the shallots and sauté until translucent.
- Add the remaining ingredients until balsamic vinegar. Bring to a boil and then reduce to a simmer.
- Partially cover with a lid and cook until the lentils and potato are cooked through.
