Ingredients

  • 1 onion, diced
  • 2 shallots, diced
  • 5 cups water
  • 1 vegetable stock cube
  • 1 ¼ cup red lentils, rinsed
  • 2 potatoes, diced
  • 1 ½ tbsp paprika
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • Salt and pepper
  • 2 tsp balsamic vinegar
  • 1 cup coconut yogurt
  • 3 slices bread

Steps

  1. Heat the wok on medium and add some oil. When hot, add the onion and sauté until golden.
  2. Add the shallots and sauté until translucent.
  3. Add the remaining ingredients until balsamic vinegar. Bring to a boil and then reduce to a simmer.
  4. Partially cover with a lid and cook until the lentils and potato are cooked through.
