Ingredients

  • 1 ½ cups cashews
  • 4 cloves garlic
  • 2 spring onion shoots
  • 1 inch piece of ginger
  • 2 shallots finely chopped
  • 1 lemongrass stalk grated
  • Coriander
  • 2 eggs
  • 2 tbsp curry paste
  • 2 cups cooked rice
  • Shiitake mushrooms
  • 1 cup grated carrot
  • 1 cup grated courgette

Steps

  1. Blend the cashews until coarse crumbs.
  2. Add the garlic, spring onion, ginger, shallots, lemongrass, coriander, eggs, curry paste and rice. Blend until a chunky paste.
  3. Pat grated carrot and courgette with a paper towel to remove moisture
  4. Stir in mushrooms, courgette and carrot.
  5. Form into patties.
