Asian burger patties
Ingredients
- 1 ½ cups cashews
- 4 cloves garlic
- 2 spring onion shoots
- 1 inch piece of ginger
- 2 shallots finely chopped
- 1 lemongrass stalk grated
- Coriander
- 2 eggs
- 2 tbsp curry paste
- 2 cups cooked rice
- Shiitake mushrooms
- 1 cup grated carrot
- 1 cup grated courgette
Steps
- Blend the cashews until coarse crumbs.
- Add the garlic, spring onion, ginger, shallots, lemongrass, coriander, eggs, curry paste and rice. Blend until a chunky paste.
- Pat grated carrot and courgette with a paper towel to remove moisture
- Stir in mushrooms, courgette and carrot.
- Form into patties.
