Ingredients

  • 3 bulbs garlic
  • ⅓ cup olive oil
  • 1 tablespoon lemon juice
  • ¼ tsp lemon zest
  • ⅛ tsp paprika
  • Pinch of salt
  • 1 loaf of crusty bread
  • 1 tbsp nooch
  • ¼ chopped parsley

Steps

  1. Warm the oven to 200°C and pull off all the extra layers of paper around the bulbs of garlic.
  2. Chop the top ¼” off the bulbs to expose their innards.
  3. Wrap them individually in foil and pour ½ teaspoon of olive oil over the top as you close them up.
  4. Roast in the oven for 40 minutes or until all the cloves look golden.
  5. Lower oven to 160°C. Then cut diagonally from corner to corner in both directions, like a checker board.
  6. Grab you blender or food processor and dump all the cloves of garlic from the 2 bulbs right in.
  7. Add the oil, lemon juice, zest, paprika, and salt and run that shit until the mixture looks nice and smooth.
  8. Using a knife or pastry brush, smear the sauce inside all the open cuts on the bread.
  9. Sprinkle in the nooch, wrap in foil, and throw it in the oven to get all toasty, about 20 minutes.
  10. Sprinkle over the parsley and serve as soon as it’s cool enough to eat.
