  • Farfalle
  • 1 onion, finely, chopped
  • 6 garlic cloves, minced
  • 4 plant based sausages
  • 1 tsp dried parsley
  • ½ tsp dried oregano
  • 2 cups baby spinach
  • 1 can crushed tomatoes
  • 1 cup vegan cream
  • ½ cup chopped sun-dried tomatoes
  • Red chilli flakes
  • Basil

Steps

  1. Cook farfalle in salted water according to package directions, reserve ¼ cup of the water.
  2. Meanwhile, preheat large pan on medium heat.
  3. Add onions and oil, cook on medium low for 10 min, adding ½ cup water to prevent burning.
  4. Add minced garlic and crumble in the sausages.
  5. Stir, season and cook for 6 to 8 min, stirring periodically, until starting to brown.
  6. Add remaining ingredients (besides the pasta) and cook 2 to 3 min, stirring as spinach wilts.
  7. Add pasta, stir, add pasta cooking water if desired.
