Cheesy garlic potatoes
Ingredients
- 1kg potatoes
- 60ml olive oil
- 7 garlic cloves
- 80g grated vegan cheese
- 1 tsp oregano
- 1 tsp thyme
- Salt & pepper
Steps
- Cut potatoes into halves or quarters.
- Add the potatoes to some salted boiling water and parboil them for 6-8 minutes.
- Mix the rest of the ingredients into a dressing.
- Drain the potatoes and add them to the dressing. Mix until all the potatoes are coated.
- Grease a baking sheet with some oil and spread the potatoes out onto this.
- Roast in the oven for 15 minutes on 200°C on the lowest rack of the oven.
- Take them out, flip the potatoes and roast for 20 minutes in the middle of the oven.
