Ingredients

  • 1kg potatoes
  • 60ml olive oil
  • 7 garlic cloves
  • 80g grated vegan cheese
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt & pepper

Steps

  1. Cut potatoes into halves or quarters.
  2. Add the potatoes to some salted boiling water and parboil them for 6-8 minutes.
  3. Mix the rest of the ingredients into a dressing.
  4. Drain the potatoes and add them to the dressing. Mix until all the potatoes are coated.
  5. Grease a baking sheet with some oil and spread the potatoes out onto this.
  6. Roast in the oven for 15 minutes on 200°C on the lowest rack of the oven.
  7. Take them out, flip the potatoes and roast for 20 minutes in the middle of the oven.
