Ingredients

  • 1 block smoked tofu
  • 6 tbsp bbq sauce
  • 5 tbsp cornflour
  • 2 mangos, finely diced
  • 1 avocado, finely diced
  • ½ bunch coriander, chopped
  • ½ red onion, finely chopped
  • 1 red chilli, finely chopped
  • Juice of 1 lime
  • 1 tbsp olive oil
  • Rice
  • ½ bunch coriander
  • Juice of 1 lime

Steps

  1. Drain and press the tofu then cut into cubes.
  2. Combine the tofu with 2 tbsp of the bbq sauce, then let it marinate for 15 minutes.
  3. Combine the mango, avocado, coriander, red onion, chilli, lime juice and olive oil in a bowl.
  4. Season with salt and black pepper then refrigerate.
  5. Clean and cook the rice.
  6. Pour the cornflour out onto a plate and season with salt and pepper.
  7. Roll and coat each cube of tofu in the cornflour mixture, then shake off any excess.
  8. Heat oil in a large pan over medium-high.
  9. Once hot, add the tofu pieces and fry for 2-3 minutes each side, or until golden and crispy.
  10. Add the remaining BBQ sauce into the pan, give everything a good stir to coat, then remove from the heat.
  11. Once rice is cooked mix the coriander and lime juice into the rice and fluff with a fork.
