BBQ tofu bowl
Ingredients
- 1 block smoked tofu
- 6 tbsp bbq sauce
- 5 tbsp cornflour
- 2 mangos, finely diced
- 1 avocado, finely diced
- ½ bunch coriander, chopped
- ½ red onion, finely chopped
- 1 red chilli, finely chopped
- Juice of 1 lime
- 1 tbsp olive oil
- Rice
- ½ bunch coriander
- Juice of 1 lime
Steps
- Drain and press the tofu then cut into cubes.
- Combine the tofu with 2 tbsp of the bbq sauce, then let it marinate for 15 minutes.
- Combine the mango, avocado, coriander, red onion, chilli, lime juice and olive oil in a bowl.
- Season with salt and black pepper then refrigerate.
- Clean and cook the rice.
- Pour the cornflour out onto a plate and season with salt and pepper.
- Roll and coat each cube of tofu in the cornflour mixture, then shake off any excess.
- Heat oil in a large pan over medium-high.
- Once hot, add the tofu pieces and fry for 2-3 minutes each side, or until golden and crispy.
- Add the remaining BBQ sauce into the pan, give everything a good stir to coat, then remove from the heat.
- Once rice is cooked mix the coriander and lime juice into the rice and fluff with a fork.
