Creamy spinach pasta
Ingredients
- 1 block tofu
- 2 tbsp nutritional yeast
- 1 tbsp black pepper
- Salt to taste
- 250ml pasta water
- 250ml plant based milk
- 4 portions spaghetti
- 6 cloves garlic, finely chopped
- 4 small shallots, finely sliced
- 100g spinach
- Frozen peas
Steps
- Blend ingredients from tofu to salt together for the sauce.
- Boil salted water in a pot and cook pasta according to package instructions.
- Fry off the minced shallots and garlic in a pan with olive oil.
- Once soft add the cream sauce along with the pasta water and mix together, keep heat low.
- Add the cooked pasta, spinach and peas and mix together.
- Top each bowl with more salt & pepper to taste and a glug of extra virgin olive oil.
