Ingredients

  • 1 block tofu
  • 2 tbsp nutritional yeast
  • 1 tbsp black pepper
  • Salt to taste
  • 250ml pasta water
  • 250ml plant based milk
  • 4 portions spaghetti
  • 6 cloves garlic, finely chopped
  • 4 small shallots, finely sliced
  • 100g spinach
  • Frozen peas

Steps

  1. Blend ingredients from tofu to salt together for the sauce.
  2. Boil salted water in a pot and cook pasta according to package instructions.
  3. Fry off the minced shallots and garlic in a pan with olive oil.
  4. Once soft add the cream sauce along with the pasta water and mix together, keep heat low.
  5. Add the cooked pasta, spinach and peas and mix together.
  6. Top each bowl with more salt & pepper to taste and a glug of extra virgin olive oil.
