Mongolian ground beef noodles
Ingredients
- Vegan mince or crumbled tofu
- 1 onion, chopped
- 8 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- ½ cup spring onions, whites and greens separated
- Ramen noodles, cooked
- Broccoli
- Pak choi
- 1 tbsp cornstarch
- ¼ cup soy sauce
- ¼ cup brown sugar
- ¼ cup vegan beef stock
- 2 tbsp hoisin sauce
- 2 tbsp shaoxing wine
- 1 tbsp toasted sesame oil
- 1 tsp vegan beef bouillon
- ¼ tsp pepper
- 1 tbsp chilli garlic sauce
Steps
- In a small bowl whisk together all the sauce ingredients, mix well and set aside.
- In the wok heat some oil on medium then add the onions and sauté until translucent.
- Add the garlic, ginger and white parts of the spring onions, stir, and cook 2 mins.
- Add the mince or tofu and mix everything together. Cook until brown and crispy.
- Stir in the sauce and keep cooking until sauce starts to thicken.
- Add the noodles, broccoli and pak choi, stir until pak choi is ready.
