Ingredients

  • Vegan mince or crumbled tofu
  • 1 onion, chopped
  • 8 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ½ cup spring onions, whites and greens separated
  • Ramen noodles, cooked
  • Broccoli
  • Pak choi
  • 1 tbsp cornstarch
  • ¼ cup soy sauce
  • ¼ cup brown sugar
  • ¼ cup vegan beef stock
  • 2 tbsp hoisin sauce
  • 2 tbsp shaoxing wine
  • 1 tbsp toasted sesame oil
  • 1 tsp vegan beef bouillon
  • ¼ tsp pepper
  • 1 tbsp chilli garlic sauce

Steps

  1. In a small bowl whisk together all the sauce ingredients, mix well and set aside.
  2. In the wok heat some oil on medium then add the onions and sauté until translucent.
  3. Add the garlic, ginger and white parts of the spring onions, stir, and cook 2 mins.
  4. Add the mince or tofu and mix everything together. Cook until brown and crispy.
  5. Stir in the sauce and keep cooking until sauce starts to thicken.
  6. Add the noodles, broccoli and pak choi, stir until pak choi is ready.
