Breakfast burritos
Ingredients
- 1 red onion
- 2 cloves garlic
- 1 avocado
- 2 tomatoes
- 1 lime
- 1 bunch coriander
- ½ tsp cumin
- 8 hash browns
- Halloumi
- Nuggies
- 4 large eggs
- ½ block silken tofu
- 6 wraps
Steps
- Heat the oven to 200°C and put in hash browns and nuggies.
- Cut halloumi into slices and add to oven slightly later.
- Finely chop red onion, garlic, avocado, tomatoes and coriander and mix together for salsa.
- Add cumin and squeeze lime juice over salsa.
- Whisk eggs together and cook for scrambled eggs.
- Mix tofu and cumin to make tofu scramble.
- Assemble burritos by adding a mixture of the salsa, eggs or tofu and halloumi or nuggies.
