Ingredients

  • 1 red onion
  • 2 cloves garlic
  • 1 avocado
  • 2 tomatoes
  • 1 lime
  • 1 bunch coriander
  • ½ tsp cumin
  • 8 hash browns
  • Halloumi
  • Nuggies
  • 4 large eggs
  • ½ block silken tofu
  • 6 wraps

Steps

  1. Heat the oven to 200°C and put in hash browns and nuggies.
  2. Cut halloumi into slices and add to oven slightly later.
  3. Finely chop red onion, garlic, avocado, tomatoes and coriander and mix together for salsa.
  4. Add cumin and squeeze lime juice over salsa.
  5. Whisk eggs together and cook for scrambled eggs.
  6. Mix tofu and cumin to make tofu scramble.
  7. Assemble burritos by adding a mixture of the salsa, eggs or tofu and halloumi or nuggies.
