Tonyuu zosui
Ingredients
- 2 ½ cups unsweetened soy milk
- 2 tsp kombu dashi granules
- 2 ½ tbsp soy sauce
- 1 cup cooked short grain rice
- 2 sheets of yuba, rehydrated
- 3 shiitake mushrooms, sliced
- ½ carrot, thinly sliced
- 2 spring onions, sliced
- 2 cups spinach
- ¼ tsp white pepper
Steps
- Over medium heat add the soy milk, kombu dashi and soy sauce to a pot and stir to combine.
- Once the broth starts to boil, reduce the heat to a simmer.
- Add the carrot and cook covered until tender, about 4-5 minutes.
- Add the rice, mushrooms, yuba, spring onions and spinach. Stir everything to combine.
- Turn off the heat, cover the pot with the lid and let it rest for 5 minutes.
