Ingredients

  • 2 ½ cups unsweetened soy milk
  • 2 tsp kombu dashi granules
  • 2 ½ tbsp soy sauce
  • 1 cup cooked short grain rice
  • 2 sheets of yuba, rehydrated
  • 3 shiitake mushrooms, sliced
  • ½ carrot, thinly sliced
  • 2 spring onions, sliced
  • 2 cups spinach
  • ¼ tsp white pepper

Steps

  1. Over medium heat add the soy milk, kombu dashi and soy sauce to a pot and stir to combine.
  2. Once the broth starts to boil, reduce the heat to a simmer.
  3. Add the carrot and cook covered until tender, about 4-5 minutes.
  4. Add the rice, mushrooms, yuba, spring onions and spinach. Stir everything to combine.
  5. Turn off the heat, cover the pot with the lid and let it rest for 5 minutes.
