Ingredients

  • 1 cup almond milk
  • 1 tbsp apple cider vinegar
  • 2 cups all purpose flour
  • 1 ½ cups sugar
  • ¾ cup cocoa powder
  • 2 tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • ½ cup melted coconut oil
  • ⅔ cup unsweetened apple sauce
  • 1 tbsp vanilla extract
  • 1 cup boiling water
  • ½ cup cocoa powder
  • ¾ cup vegan butter, softened
  • 2-3 cups powdered sugar
  • 1 tsp vanilla extract
  • ¼ cup almond milk

Steps

  1. Preheat oven to 180°C and grease and line two 9-inch cake pans.
  2. Add the vinegar to the cup of almond milk. Stir slightly and set aside to curdle.
  3. In a large bowl add the flour, sugar, cocoa, baking powder, baking soda and salt. Whisk to combine.
  4. Now add the oil, apple sauce, vanilla and almond milk/vinegar mixture.
  5. Mix on medium speed with a hand mixer until well combined.
  6. Lower the speed and pour in the boiling water, continuing to mix until combined.
  7. Divide the batter evenly between your cake pans. Bake for 30-35 minutes.
  8. Sieve the cocoa powder to a large bowl.
  9. Add the butter and mix with a hand mixer until creamed and well combined.
  10. Add half of the powdered sugar and half of the almond milk, and mix until combined.
  11. Add the rest of the powdered sugar and vanilla. Mix starting on low and turn to high until fluffy and combined.
