Chipotle bean bowl
Ingredients
- 1 can black beans
- 2 red onions, finely chopped
- 1 red pepper, sliced
- 1 yellow pepper, sliced
- 4 garlic cloves, minced
- 1 tbsp tomato paste
- 2 tsp chipotle paste
- 1 avocado
- Cherry tomatoes, quartered
- 1 lime
- Coriander
- Lettuce
Steps
- Clean and cook the rice.
- Heat a pan with some olive oil. Add the chopped bell peppers and half the red onion.
- Once partially cooked add the chopped garlic and black beans in their juice.
- Simmer for 5 minutes then add in the tomato paste and chipotle paste.
- Mix the remaining lime juice and half the coriander into the rice.
- Assemble the bowl.
