Ingredients

  • 1 can black beans
  • 2 red onions, finely chopped
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 4 garlic cloves, minced
  • 1 tbsp tomato paste
  • 2 tsp chipotle paste
  • 1 avocado
  • Cherry tomatoes, quartered
  • 1 lime
  • Coriander
  • Lettuce

Steps

  1. Clean and cook the rice.
  2. Heat a pan with some olive oil. Add the chopped bell peppers and half the red onion.
  3. Once partially cooked add the chopped garlic and black beans in their juice.
  4. Simmer for 5 minutes then add in the tomato paste and chipotle paste.
  5. Mix the remaining lime juice and half the coriander into the rice.
  6. Assemble the bowl.
