Spicy breakfast burritos
Ingredients
- 1 can black beans
- 1 block extra firm tofu
- 2 tsp turmeric
- 2 tsp cumin
- 2 tsp paprika
- 2 tsp chipotle paste
- 25ml oat milk
- Big handful spinach
- 2 limes
- 1 avocado
- Salt and pepper
- Sun-dried tomatoes
- Hot sauce
- Hash browns
- Coriander, chopped
- Tortilla wraps
Steps
- Drain and press the tofu.
- Heat the oven to 180°C. Put the hash browns on a lined tray in the oven
- Heat some oil in the pan, crumble the tofu.
- Add the spices, chipotle paste, black beans and milk to the tofu.
- Cook until the milk has evaporated then add the spinach and a squeeze of lime, cook until wilted.
- Place all the ingredients in the tortilla and wrap them.
- Lightly coat the pan with oil and heat. When the pan is hot, add the burritos, seam side down.
- Once the bottom is golden brown flip the burritos and continue cooking until golden.
