Spicy breakfast burritos

Ingredients

  • 1 can black beans
  • 1 block extra firm tofu
  • 2 tsp turmeric
  • 2 tsp cumin
  • 2 tsp paprika
  • 2 tsp chipotle paste
  • 25ml oat milk
  • Big handful spinach
  • 2 limes
  • 1 avocado
  • Salt and pepper
  • Sun-dried tomatoes
  • Hot sauce
  • Hash browns
  • Coriander, chopped
  • Tortilla wraps

Steps

  1. Drain and press the tofu.
  2. Heat the oven to 180°C. Put the hash browns on a lined tray in the oven
  3. Heat some oil in the pan, crumble the tofu.
  4. Add the spices, chipotle paste, black beans and milk to the tofu.
  5. Cook until the milk has evaporated then add the spinach and a squeeze of lime, cook until wilted.
  6. Place all the ingredients in the tortilla and wrap them.
  7. Lightly coat the pan with oil and heat. When the pan is hot, add the burritos, seam side down.
  8. Once the bottom is golden brown flip the burritos and continue cooking until golden.
