Shao bing
Ingredients
- 300g all-purpose flour
- 4g yeast
- 175g warm water
- 150g spring onions
- 3 tbsp flour
- 4 tbsp cooking oil
- ½ tsp salt
- Pinch of five spice
- 2 tbsp maple syrup
- 1 tbsp oat milk
- Sesame seeds
Steps
- Place all-purpose flour in a bowl then sprinkle yeast on top.
- Using chopsticks slowly add the water while stirring until there are no dry spots of flour left.
- Knead into a soft dough. Cover with a moist towel. Let it proof about 30-35 minutes.
- Add flour to a bowl and heat the oil. Carefully pour the oil into the bowl with flour.
- Stir to combine into a paste and let it cool.
- Preheat the oven to 245C.
- Dust the work surface with flour. Roll the dough into a large rectangle roughly 3mm thick.
- Spread ⅔ of the oil paste over and place the chopped spring onions in the middle third of the dough.
- Gently press green onions to adhere.
- Flip one side over to cover the spring onions. Then, spread the remaining oil paste and green onions on top.
- Bring the top part over to cover and then pinch to seal all the openings.
- Flip it over so the seamed side is facing down.
- Whisk maple syrup and milk together until incorporated.
- Brush the dough with a layer of wash. Then, pack the top with sesame seeds.
- Cut into 6 equal portions and transfer to a baking tray, 1-inch apart.
- Bake for 12 minutes until golden brown.
