Caramelised tofu and onion sandwich

Ingredients

  • 2 romano peppers
  • 1 block tofu
  • 1 ½ tbsp nutritional yeast
  • ¼ cup soy sauce
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 ¼ tsp sriracha
  • 2 onions, thinly sliced
  • 4 buns
  • Vegan aioli
  • Spinach

Steps

  1. Drain and press the tofu.
  2. Preheat the oven to 180°C. Cut the peppers in half lengthways and remove seeds.
  3. Place cut side up on a lined baking tray, drizzle with olive oil. Roast peppers until soft, 10-15 minutes.
  4. Cut the tofu into 8 rectangles of equal size.
  5. In a baking dish mix the nutritional yeast, soy sauce, onion powder, garlic powder, and sriracha.
  6. Place the tofu in the marinade. Coat both sides and set aside for 15 minutes, flipping them over halfway.
  7. Heat oil in the pan. Remove the tofu from the marinade and cook for about 5 minutes on each side.
  8. Add the onion and remaining marinade to the pan. Cook until browned.
