Ingredients

  • ¼ cup olive oil
  • 6 large shallots, thinly sliced
  • 6 garlic cloves, 4 sliced, 1 chopped
  • Salt and pepper
  • 1 tsp red-pepper flakes
  • 2 tbsp miso paste
  • ½ cup tomato paste
  • Button mushrooms, finely chopped
  • 10 ounces pasta
  • 1 cup parsley, chopped
  • Zest of 1 lemon and juice of ½

Steps

  1. Heat olive oil in the wok over medium. Add shallots and sliced garlic, season with salt and pepper.
  2. Cook, stirring occasionally, until the shallots have caramelized, 15 to 20 minutes.
  3. Add red-pepper flakes and miso paste. Stir to melt the miso paste into the shallots.
  4. Add tomato paste, lemon zest, mushrooms and season with salt and pepper.
  5. Cook, stirring constantly, until the tomato paste has started to darken. Add juice of ½ lemon.
  6. Cook pasta according to package instructions, reserving one cup of water.
  7. Transfer pasta to wok along with 1 cup of pasta water.
  8. Cook, mixing thoroughly until sauce has reduced and is sticky, but not saucy, 3 to 5 minutes.
  9. In a bowl combine parsley and garlic, season with salt and pepper.
