Caramelized shallot pasta
Ingredients
- ¼ cup olive oil
- 6 large shallots, thinly sliced
- 6 garlic cloves, 4 sliced, 1 chopped
- Salt and pepper
- 1 tsp red-pepper flakes
- 2 tbsp miso paste
- ½ cup tomato paste
- Button mushrooms, finely chopped
- 10 ounces pasta
- 1 cup parsley, chopped
- Zest of 1 lemon and juice of ½
Steps
- Heat olive oil in the wok over medium. Add shallots and sliced garlic, season with salt and pepper.
- Cook, stirring occasionally, until the shallots have caramelized, 15 to 20 minutes.
- Add red-pepper flakes and miso paste. Stir to melt the miso paste into the shallots.
- Add tomato paste, lemon zest, mushrooms and season with salt and pepper.
- Cook, stirring constantly, until the tomato paste has started to darken. Add juice of ½ lemon.
- Cook pasta according to package instructions, reserving one cup of water.
- Transfer pasta to wok along with 1 cup of pasta water.
- Cook, mixing thoroughly until sauce has reduced and is sticky, but not saucy, 3 to 5 minutes.
- In a bowl combine parsley and garlic, season with salt and pepper.
