BBQ jackfruit sandwich
Ingredients
- 2 cans young green jackfruit
- 2 tbsp brown sugar
- 1 tsp paprika
- 1 tsp garlic powder
- ½ tsp salt
- ½ tsp pepper
- ½ tsp chilli powder
- ¾ cup BBQ sauce
- ½ ripe avocado
- 1 tbsp maple syrup
- ½ red onion, chopped
- Coriander, chopped
- 1 mango, thinly sliced
- Juice of 1 lime
- ¼ tsp cumin

Steps
- Rinse, drain and thoroughly dry jackfruit. Chop off the centre core portion and discard.
- Mix together sugar and spices and add to jackfruit. Toss to coat.
- Heat the wok. Once hot add oil and jackfruit. Toss to coat and cook for 2-3 minutes.
- Add BBQ sauce and thin with enough water to make a sauce.
- Stir, reduce heat and cook covered for about 20 minutes. Remove lid and stir occasionally.
- Combine ingredients from avocado to cumin to make salsa.
- Once jackfruit has been simmered, turn up heat and cook for 2-3 minutes to get a little extra colour/texture.
