Ingredients

  • 2 cans young green jackfruit
  • 2 tbsp brown sugar
  • 1 tsp paprika
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp pepper
  • ½ tsp chilli powder
  • ¾ cup BBQ sauce
  • ½ ripe avocado
  • 1 tbsp maple syrup
  • ½ red onion, chopped
  • Coriander, chopped
  • 1 mango, thinly sliced
  • Juice of 1 lime
  • ¼ tsp cumin
  • Buns

Steps

  1. Rinse, drain and thoroughly dry jackfruit. Chop off the centre core portion and discard.
  2. Mix together sugar and spices and add to jackfruit. Toss to coat.
  3. Heat the wok. Once hot add oil and jackfruit. Toss to coat and cook for 2-3 minutes.
  4. Add BBQ sauce and thin with enough water to make a sauce.
  5. Stir, reduce heat and cook covered for about 20 minutes. Remove lid and stir occasionally.
  6. Combine ingredients from avocado to cumin to make salsa.
  7. Once jackfruit has been simmered, turn up heat and cook for 2-3 minutes to get a little extra colour/texture.
