Lemon lavender shortbread cookies
Ingredients
- 1 cup flour
- ¼ cup vegan butter (room temp)
- ¼ cup apple sauce
- ½ cup powdered sugar
- 2 tsp culinary lavender
- 1 ½ tsp lemon zest
- ½ tsp vanilla extract
- ¼ tsp salt
- ¾ cup powdered sugar
- 1-2 tbsp milk
Steps
- In a bowl, mix together the flour and salt.
- In another bowl, cream the butter, apple sauce and powdered sugar until smooth.
- To the butter mixture add the vanilla, lavender and lemon and mix.
- Add dry ingredients to wet and mix until you form a ball of dough.
- Wrap and chill in the fridge for 30 minutes.
- Dust bench with a little powdered sugar and roll the dough out.
- Cut roughly ⅓ inch cookies out of the dough and place on a lined baking sheet.
- Once all cookies are on the sheet, place in the freezer for 15 minutes.
- Preheat oven to 162C, bake for 12-14 minutes until the edges of the cookies are just slightly brown.
- Once cool, mix together icing sugar and milk to form the glaze and dip the cookies in half way.
