Ingredients

  • ½ tsp black mustard seeds
  • ½ tsp fenugreek seeds
  • 1 onion, finely chopped
  • 2 garlic 2 cloves, finely chopped
  • 2 green chillies, finely chopped
  • 1 tsp curry powder
  • 1 tsp cumin
  • ½ tsp ground coriander
  • ½ tsp chilli powder
  • 1 tsp turmeric
  • 1 stick cinnamon
  • 1 tomato, chopped
  • 6-8 curry leaves
  • 5cm pandan leaf
  • 500g jackfruit, drained
  • 250ml coconut milk
  • 1 tbsp lime juice
  • 1 tsp sugar
  • ½ salt
  • Rice

Steps

  1. Heat oil over a medium heat and fry the mustard and fenugreek seeds for 1 minute until popping.
  2. Add the onion, garlic, chilli, spices, tomato, curry leaves and pandan leaf.
  3. Stir continuously for 3-5 minutes or until the tomato starts to break down.
  4. Bring to a boil, put on a lid and gently simmer for 1 hour or until the jackfruit is very soft.
  5. Clean and cook the rice.
