Ingredients

  • ½ cup vegan butter
  • ½ cup brown sugar, firmly packed
  • ½ cup granulated sugar
  • 1 tbsp vanilla extract
  • ¾ tsp salt
  • 1 ¾ tsp baking powder
  • 1 tsp baking soda
  • 5 tbsp aquafaba
  • 2 ¼ cups flour
  • 2 ½ cups vegan chocolate chips
  • 1 ¾ cup raw walnut pieces

Steps

  1. In a large bowl, add the butter, sugars, vanilla, salt, baking powder and baking soda.
  2. Mix, gradually increasing the speed, until fluffy and lighter in colour. Be sure to scrape the sides of the bowl.
  3. Gradually add the aquafaba in thirds and beat with the mixer between each addition.
  4. Add all the flour and mix until combined. Scraping down the sides and bottom of the bowl.
  5. Fold in the chocolate chips and nuts by hand with a silicone spatula.
  6. Divide the dough into 8 even portions and shape each portion into a smooth ball.
  7. Place balls on a lined baking tray. Cover dough balls with cling film. Refrigerate for at least 12 hours.
  8. Preheat the oven to 180°C. Line a baking sheet with parchment paper.
  9. Place 3 or 4 cookie dough portions on the pan with lots of space.
  10. Bake for about 20 to 22 minutes or until the cookies are lightly browned on top.
