Cookies
Ingredients
- ½ cup vegan butter
- ½ cup brown sugar, firmly packed
- ½ cup granulated sugar
- 1 tbsp vanilla extract
- ¾ tsp salt
- 1 ¾ tsp baking powder
- 1 tsp baking soda
- 5 tbsp aquafaba
- 2 ¼ cups flour
- 2 ½ cups vegan chocolate chips
- 1 ¾ cup raw walnut pieces
Steps
- In a large bowl, add the butter, sugars, vanilla, salt, baking powder and baking soda.
- Mix, gradually increasing the speed, until fluffy and lighter in colour. Be sure to scrape the sides of the bowl.
- Gradually add the aquafaba in thirds and beat with the mixer between each addition.
- Add all the flour and mix until combined. Scraping down the sides and bottom of the bowl.
- Fold in the chocolate chips and nuts by hand with a silicone spatula.
- Divide the dough into 8 even portions and shape each portion into a smooth ball.
- Place balls on a lined baking tray. Cover dough balls with cling film. Refrigerate for at least 12 hours.
- Preheat the oven to 180°C. Line a baking sheet with parchment paper.
- Place 3 or 4 cookie dough portions on the pan with lots of space.
- Bake for about 20 to 22 minutes or until the cookies are lightly browned on top.
