Ingredients

  • 1 block tofu
  • Warm water
  • Baking soda, 1% of water
  • Salt, 1% of water
  • ¼ tsp garlic powder
  • ½ tsp onion powder
  • ¾ tsp salt
  • ½ tsp ground white pepper
  • ¼ tsp ground sichuan peppercorn
  • 2 tbsp cornstarch
  • 2 shallots, thinly sliced
  • 2 spring onions, thinly sliced
  • 1 green chilli, thinly sliced
  • 5 cloves garlic, minced
  • 1 green pepper, thinly sliced
  • ¼ tsp salt
  • ¼ tsp sugar
  • ¼ tsp ground black pepper
  • ¼ tsp MSG
  • ¼ tsp five spice powder
  • Rice, cooked
  • 1 tsp coriander, finely chopped

Steps

  1. Cut tofu into cubes. Combine water, salt, baking soda, garlic powder and onion powder in a shallow dish.
  2. Add the tofu, making sure it is covered. Soak for 4-8 hours.
  3. Take tofu out of the solution and pat with a towel to absorb excess water. Leave to air dry.
  4. Add tofu to a bowl and toss in white pepper, salt, sichuan peppercorn and cornstarch.
  5. Heat oil in the pan. Once hot add the tofu in a single layer. Cook until golden brown on all sides.
  6. Meanwhile in a small bowl, mix the salt, sugar, pepper, MSG, and Chinese five spice powder.
  7. Heat the wok over high with a little oil. Once hot add the shallots, chilli, garlic, bell pepper and spring onion whites. Cook until softened.
  8. Return the fried tofu to the pan, sprinkle with the seasoning blend, and toss over high heat until the tofu is evenly coated and the salt in the mixture is lightly toasted.
  9. Add the coriander and spring onion greens and turn off the heat. Toss to mix.
