Ingredients

  • Eggplant
  • 3 eggplants
  • Mint
  • Oregano (or your favourite herbs)
  • Juice and zest of 1 lemon
  • 2 garlic cloves
  • 1 chilli finely chopped
  • Olive oil
  • Salt

  • Dough
  • 450g strong white bread flour
  • 275ml warm water
  • 1 tsp salt
  • 2 tsp instant yeast
  • 1 tbsp olive oil

Steps

  1. Cut the aubergines in wedges, place them in a bowl.
  2. Add salt and olive oil.
  3. Mix everything with your hands.
  4. Place on a roasting tray covered with some baking parchment.
  5. Put it in the oven at 210C for around 25 - 30 min - The aubergines need to be roasted, their colour will tell you.
  6. When you take them out of the oven put them in a bowl with all the marinating ingredients and mix well.
  7. Leave to rest for 1 hour min. If you do this the previous day you can put everything in the fridge to marinate otherwise you can leave it out.
  8. Wait over night.
  9. When the pizza dough is ready to bake, oil the tins lightly, spread the dough there.
  10. Cook at 230 C for around 8 - 10 mins.
  11. You have to check the bottom of the pizzas really, tap them with the flat of a knife and see what noise they make as it very much depends on your oven.
  12. When the pizza base is done, put the aubergines on and buffalo mozzarella broken in big chunks.
