Ingredients

  • 1 tbsp sugar
  • 3 shallots, minced
  • 4 cloves garlic, diced
  • 2 tbsp chopped spring onions
  • ⅓ cup water
  • 2 tbsp vegan fish sauce
  • ½ tbsp sriracha
  • 1 tsp soy sauce
  • ¼ tsp black pepper
  • Cremini mushrooms, halved
  • 1 block tofu
  • 2 tbsp cornstarch
  • Rice
  • Pak choi

Steps

  1. Drain and press the tofu.
  2. Clean and cook the rice.
  3. Cubed the tofu and toss in a bowl with cornstarch.
  4. Heat some oil in the frying pan. Place the tofu in the pan in a single layer and cook until browned on all sides.
  5. Heat 2 tbsp water and sugar in a pot. Let the sugar caramelize.
  6. Add the minced shallot, garlic and green onions and cook for one more minute.
  7. De-glaze with the water. Add the vegan fish sauce, sriracha, soy sauce, pepper, and stir to combine.
  8. Add the tofu and mushrooms and bring to a simmer. At the last minute add the pak choi and cook until wilted.
