Braised tofu
Ingredients
- 1 tbsp sugar
- 3 shallots, minced
- 4 cloves garlic, diced
- 2 tbsp chopped spring onions
- ⅓ cup water
- 2 tbsp vegan fish sauce
- ½ tbsp sriracha
- 1 tsp soy sauce
- ¼ tsp black pepper
- Cremini mushrooms, halved
- 1 block tofu
- 2 tbsp cornstarch
- Rice
- Pak choi
Steps
- Drain and press the tofu.
- Clean and cook the rice.
- Cubed the tofu and toss in a bowl with cornstarch.
- Heat some oil in the frying pan. Place the tofu in the pan in a single layer and cook until browned on all sides.
- Heat 2 tbsp water and sugar in a pot. Let the sugar caramelize.
- Add the minced shallot, garlic and green onions and cook for one more minute.
- De-glaze with the water. Add the vegan fish sauce, sriracha, soy sauce, pepper, and stir to combine.
- Add the tofu and mushrooms and bring to a simmer. At the last minute add the pak choi and cook until wilted.
