Lu Rou Fan
Ingredients
- 1 block tofu
- King oyster mushrooms, diced
- 6 cloves garlic, finely chopped
- 3 shallots, finely chopped
- 3 tbsp spring onions, chopped
- 3 cups stock
- 1 tbsp cornstarch
- Garlic shoots
- Broccoli
- Pak choi
- Rice
- 3 tbsp soy sauce
- ½ tbsp sugar
- 1 tsp white pepper
- 1 tsp five-spice
- ¼ cup Chinese cooking wine
Steps
- Drain and press the tofu then crumble until it resembles mince.
- Clean and cook the rice.
- Cook the tofu in the wok until browned and slightly crispy.
- Push the tofu to the side, then sauté mushrooms and shallots until cooked.
- Add the spring onion whites and garlic and continue to cook until garlic is aromatic.
- Season with white pepper, five spice and sugar, then stir to combine.
- Add in the soy sauce, cooking wine, water and bring the mixture to a rolling boil.
- Once sauce has reduced roughly half, add the cornstarch slurry to thicken.
- Add the broccoli and garlic shoots and mix. Once almost cook add the pak choi and cook until wilted.
