Ingredients

  • 1 block tofu
  • King oyster mushrooms, diced
  • 6 cloves garlic, finely chopped
  • 3 shallots, finely chopped
  • 3 tbsp spring onions, chopped
  • 3 cups stock
  • 1 tbsp cornstarch
  • Garlic shoots
  • Broccoli
  • Pak choi
  • Rice
  • 3 tbsp soy sauce
  • ½ tbsp sugar
  • 1 tsp white pepper
  • 1 tsp five-spice
  • ¼ cup Chinese cooking wine

Steps

  1. Drain and press the tofu then crumble until it resembles mince.
  2. Clean and cook the rice.
  3. Cook the tofu in the wok until browned and slightly crispy.
  4. Push the tofu to the side, then sauté mushrooms and shallots until cooked.
  5. Add the spring onion whites and garlic and continue to cook until garlic is aromatic.
  6. Season with white pepper, five spice and sugar, then stir to combine.
  7. Add in the soy sauce, cooking wine, water and bring the mixture to a rolling boil.
  8. Once sauce has reduced roughly half, add the cornstarch slurry to thicken.
  9. Add the broccoli and garlic shoots and mix. Once almost cook add the pak choi and cook until wilted.
