Ingredients

  • ¼ cup gochujang
  • ¼ cup soy sauce
  • 2 tbsp sesame seeds
  • 2 tbsp hoisin sauce
  • 2 tbsp sesame oil
  • 2 tbsp water
  • 1 tbsp gochugaru
  • 2 tsp sugar
  • 4 tbsp vegan butter, divided
  • 1 block tofu
  • Shiitake mushrooms
  • Oyster mushrooms
  • Garlic shoots
  • Pak choi
  • Broccoli
  • 2 tbsp dark soy sauce
  • 1 bunch green onions
  • ½ cup thinly sliced garlic
  • 400g thick rice noodles
  • 1 cup vegetable stock

Steps

  1. Whisk the gochujang, soy sauce, sesame seeds, hoisin sauce, sesame oil, water, sugar and gochugaru in a bowl.
  2. Melt 2 tablespoons of the butter in the wok. Once melted add the mushrooms and crumble in the tofu.
  3. Cook until tofu is slightly crispy and mushrooms are cooked.
  4. Melt the remaining butter. Once melted add the spring onion whites and garlic and cook, mixing often.
  5. Reduce the heat. Pour in the sauce, noodles, garlic shoots, broccoli and stock.
  6. Add the pak choi and tofu to the pan, mix and cook until pak choi is done.
