Mushroom stroganoff
Ingredients
- 1 onion, diced
- 3 shallots, diced
- 6 cloves garlic
- Cremini mushrooms
- Shiitake mushrooms
- 1 tbsp thyme, roughly chopped
- 1 cup vegetable stock
- 2 tbsp soy sauce
- 2 tbsp cornstarch
- ⅓ cup white wine
- 1 cup cashew milk
- 2 tbsp nutritional yeast
- 1 tsp paprika
- Chilli flakes
Steps
- Clean and cook the rice.
- In the wok heat some oil, once hot add the onion and shallots.
- Add garlic, thyme and mushrooms and cook until the mushrooms are browned.
- Add the white wine and cook until reduced.
- Mix the vegetable stock, soy sauce and cornstarch until smooth.
- Add the stock mixture to the wok along with the nutritional yeast and stir to combine.
- Bring to a simmer then pour in the milk and paprika. Simmer until thickened.
- Add chilli flakes and pepper to taste and serve garnished with fresh thyme.
