Ingredients

  • 1 onion, diced
  • 3 shallots, diced
  • 6 cloves garlic
  • Cremini mushrooms
  • Shiitake mushrooms
  • 1 tbsp thyme, roughly chopped
  • 1 cup vegetable stock
  • 2 tbsp soy sauce
  • 2 tbsp cornstarch
  • ⅓ cup white wine
  • 1 cup cashew milk
  • 2 tbsp nutritional yeast
  • 1 tsp paprika
  • Chilli flakes

Steps

  1. Clean and cook the rice.
  2. In the wok heat some oil, once hot add the onion and shallots.
  3. Add garlic, thyme and mushrooms and cook until the mushrooms are browned.
  4. Add the white wine and cook until reduced.
  5. Mix the vegetable stock, soy sauce and cornstarch until smooth.
  6. Add the stock mixture to the wok along with the nutritional yeast and stir to combine.
  7. Bring to a simmer then pour in the milk and paprika. Simmer until thickened.
  8. Add chilli flakes and pepper to taste and serve garnished with fresh thyme.
