Tuscan gnocchi
Ingredients
- 4 vegan Italian sausages
- 3 shallots, diced
- 6 cloves garlic, minced
- ½ cup vegetable stock
- 1 can coconut milk
- 2 tsp lemon juice
- 1 tsp Italian seasoning
- ⅓ cup sun dried tomatoes, sliced
- 1 pound gnocchi
- 2 cups loosely packed baby spinach
- ½ cup Vegan Parmesan
- ¼ cup chopped fresh basil
- 1 tbsp chilli flakes
Steps
- Sauté the vegan sausage for about 5 minutes, until browned.
- Add the shallots and cook until translucent then add the garlic and stir until fragrant.
- Pour in the stock, coconut milk, lemon juice, seasoning, sun-dried tomatoes and gnocchi. Give everything a good stir.
- Bring to a boil, then lower heat to a simmer and cook, uncovered for 5 minutes, stirring occasionally.
- Season with salt, pepper and chilli flakes, and stir in the spinach. Cook until spinach has wilted.
- If using, stir in the vegan parmesan.
