Ingredients

  • 4 vegan Italian sausages
  • 3 shallots, diced
  • 6 cloves garlic, minced
  • ½ cup vegetable stock
  • 1 can coconut milk
  • 2 tsp lemon juice
  • 1 tsp Italian seasoning
  • ⅓ cup sun dried tomatoes, sliced
  • 1 pound gnocchi
  • 2 cups loosely packed baby spinach
  • ½ cup Vegan Parmesan
  • ¼ cup chopped fresh basil
  • 1 tbsp chilli flakes

Steps

  1. Sauté the vegan sausage for about 5 minutes, until browned.
  2. Add the shallots and cook until translucent then add the garlic and stir until fragrant.
  3. Pour in the stock, coconut milk, lemon juice, seasoning, sun-dried tomatoes and gnocchi. Give everything a good stir.
  4. Bring to a boil, then lower heat to a simmer and cook, uncovered for 5 minutes, stirring occasionally.
  5. Season with salt, pepper and chilli flakes, and stir in the spinach. Cook until spinach has wilted.
  6. If using, stir in the vegan parmesan.
