Ingredients

  • 2.5 cups flour
  • 1 cup brown sugar
  • 2 tbsp baking powder
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • A pinch of salt
  • 0.5 cup oil
  • 1 tbsp cider vinegar
  • 1 tsp vanilla
  • 3 ripe bananas
  • 0.5 cup plant-based milk
  • 50g walnuts
  • 50g almonds
  • 20g chai
  • 150ml water

Steps

  1. Mix using 150ml of water with 20g of chai. Let it stand covered for 8-10 minutes.
  2. Mix the dry ingredients (flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg).
  3. Peel and mash bananas with a fork. In a bowl add oil, cider vinegar, vanilla and tea until it's well combined.
  4. Add milk until your dough is smooth and viscous.
  5. Oil and flour a cake tin, and fill in dough. Bake at 170°C for about 50 minutes.
