Ingredients

  • 1 tbsp vegan butter
  • 1 leek
  • 1 onion
  • 5 garlic cloves
  • 2 ribs celery
  • 2-3 carrots
  • 2 cups baby potatoes
  • 6-7 mushrooms
  • 3 fresh thyme stalks
  • 1 sprig rosemary
  • 2 bay leaves
  • 1 can jackfruit
  • 1 bottle Guinness
  • 2 cups vegetable stock
  • 2 tsp corn starch
  • Mashed potato

Steps

  1. Chop your veggies into medium-large chunks.
  2. Add butter to pan, once melted add the onions and leek and cook until they start to brown.
  3. Then add the garlic and cook until softened.
  4. Add the potatoes, cook for a little bit then add the rest of the vegetables.
  5. Open the jackfruit can, drain excess water, break up larger pieces with your hands and add into the pot.
  6. Add the Guinness, stock, thyme, rosemary and bay leaves then mix well.
  7. Make a cornstarch slurry then add to the stew to thicken it.
  8. Bring to simmer and leave cooking for 30 minutes or until the potatoes are cooked.
