Vegan irish stew
Ingredients
- 1 tbsp vegan butter
- 1 leek
- 1 onion
- 5 garlic cloves
- 2 ribs celery
- 2-3 carrots
- 2 cups baby potatoes
- 6-7 mushrooms
- 3 fresh thyme stalks
- 1 sprig rosemary
- 2 bay leaves
- 1 can jackfruit
- 1 bottle Guinness
- 2 cups vegetable stock
- 2 tsp corn starch
- Mashed potato
Steps
- Chop your veggies into medium-large chunks.
- Add butter to pan, once melted add the onions and leek and cook until they start to brown.
- Then add the garlic and cook until softened.
- Add the potatoes, cook for a little bit then add the rest of the vegetables.
- Open the jackfruit can, drain excess water, break up larger pieces with your hands and add into the pot.
- Add the Guinness, stock, thyme, rosemary and bay leaves then mix well.
- Make a cornstarch slurry then add to the stew to thicken it.
- Bring to simmer and leave cooking for 30 minutes or until the potatoes are cooked.
