Apple pies
Ingredients
- 2 ½ cups flour
- 2 tbsp sugar
- 1 tsp salt
- ¾ cup vegan butter
- ⅓ cup cold water
- 2 apples
- 3 tbsp water
- 3 tbsp brown sugar
- 1 tsp cornstarch
- 1 tsp cinnamon
- ½ tsp lemon juice
- ½ tsp vanilla
- Dairy free milk
- Brown sugar
Steps
- In a large bowl combine flour, sugar and salt. Add the cubed butter and work it into the flour.
- Gradually add the cold water a tablespoon at a time and knead until a dough forms.
- Place the dough on a floured surface and form a ball then flatten into a disc. Wrap in gladwrap and refrigerate for at least ½ hour.
- Peel, core and chop the apples into small chunks.
- In a saucepan mix the water, cornstarch, sugar, cinnamon and lemon juice. Bring to a boil, stirring constantly until it thickens.
- Add the apples to the mixture and toss to coat.
- Preheat the oven to 180°C.
- On a lightly floured surface roll out the dough then cut into circles of roughly 9cm.
- Place 1 heaped tbsp of the apple filling in the centre of a circle and brush the edges with water.
- Place the other half on top and crimp the edges with a fork.
- Brush the top of each pie with milk then cut two slits. Sprinkle on some brown sugar.
- Bake for approximately 20 minutes until golden brown.
