Cookie dough brownies
Ingredients
- 1 can black beans
- 1 cup dates, soaked in hot water for 10 minutes
- ⅓ cup cocoa powder
- ¼ tsp salt
- ¼ cup coconut oil, melted
- ⅓ cup milk of choice
- 6 tbsp oat flour (blend oats until fine)
- 1 cup oat flour
- ½ tsp baking powder
- ¼ tsp salt
- ½ cup dates, soaked in hot water for 10 minutes

- 6 tbsp milk of choice
- 1 tsp vanilla extract
- ⅓ cup dark chocolate chips
Steps
- Add all the ingredients from black beans to 6 tbsp oat flour in a food processor and blend until smooth.
- Press the mixture into an 8×8 square cake tin lined with parchment paper.
- Rinse the food processor, then add remaining ingredients except chocolate chips and blend until smooth.
- Fold in the chocolate chips then spread the mixture over the brownie layer.
- Bake for 25 minutes. Leave to cool completely before slicing.
