Mint oreos
Ingredients
- 1 cup all purpose flour
- ½ cup unsweetened cocoa powder
- ¼ tsp baking soda
- ¼ tsp salt
- 6 tbsp unsalted butter
- 1 ⅙ cup light brown sugar
- 1 tsp vanilla extract
- 1 large egg white
- ½ cup butter
- 8oz cream cheese
- 3-4 cups powdered sugar
- 1 tsp mint extract
- A few drops green food colouring
Steps
- In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- In another bowl beat the butter, sugar and vanilla.
- Beat in the egg white. Add the flour mixture and beat just until incorporated.
- Place the dough on your work surface and, using your hands, form the dough into a log shape.
- Carefully wrap the dough in parchment paper and fold the ends. Refrigerate for at least one hour or overnight.
- Preheat the oven to 180°C. Line two baking sheets.
- Slice dough into ¼ inch thick wafers. Place on the baking sheet about 2.5 cm apart. Bake for approximately 10-12 minutes.
- To make icing cream butter and add cream cheese, mint extract, food colouring and mix well.
- Add powdered sugar slowly until you reach your desired consistency.
- Ice one cookie then smoosh another one on top of the icing.
