Ingredients

  • 1 cup all purpose flour
  • ½ cup unsweetened cocoa powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 6 tbsp unsalted butter
  • 1 ⅙ cup light brown sugar
  • 1 tsp vanilla extract
  • 1 large egg white
  • ½ cup butter
  • 8oz cream cheese
  • 3-4 cups powdered sugar
  • 1 tsp mint extract
  • A few drops green food colouring

Steps

  1. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  2. In another bowl beat the butter, sugar and vanilla.
  3. Beat in the egg white. Add the flour mixture and beat just until incorporated.
  4. Place the dough on your work surface and, using your hands, form the dough into a log shape.
  5. Carefully wrap the dough in parchment paper and fold the ends. Refrigerate for at least one hour or overnight.
  6. Preheat the oven to 180°C. Line two baking sheets.
  7. Slice dough into ¼ inch thick wafers. Place on the baking sheet about 2.5 cm apart. Bake for approximately 10-12 minutes.
  8. To make icing cream butter and add cream cheese, mint extract, food colouring and mix well.
  9. Add powdered sugar slowly until you reach your desired consistency.
  10. Ice one cookie then smoosh another one on top of the icing.
