Ingredients

  • 3 onions
  • 2 tbsp madras curry paste
  • Cherry tomatoes
  • 1 red chilli
  • Coriander
  • 8 eggs
  • 1 red onion
  • 2 cloves garlic
  • 1 avocado
  • 2 tomatoes
  • 1 lime
  • 1 bunch coriander
  • ½ tsp cumin
  • 1 red pepper
  • 1 green pepper
  • 1 yellow pepper
  • 1 bag of spinach

Steps

  1. In a pan cook the onion. Once softened add the peppers.
  2. Add the green pepper, red pepper, courgette in order leaving each a few minutes to cook.
  3. Add the Madras paste and fry for 1 min more, then tip in the cherry tomatoes and the chilli.
  4. Finely chop red onion, garlic, avocado, tomatoes and half the coriander and mix together.
  5. Add cumin and squeeze lime juice over salsa.
  6. Add the remaining coriander and eggs to the onion mixture and cook until egg has set stirring infrequently.
