Masala frittata
Ingredients
- 3 onions
- 2 tbsp madras curry paste
- Cherry tomatoes
- 1 red chilli
- Coriander
- 8 eggs
- 1 red onion
- 2 cloves garlic
- 1 avocado
- 2 tomatoes
- 1 lime
- 1 bunch coriander
- ½ tsp cumin
- 1 red pepper
- 1 green pepper
- 1 yellow pepper
- 1 bag of spinach
Steps
- In a pan cook the onion. Once softened add the peppers.
- Add the green pepper, red pepper, courgette in order leaving each a few minutes to cook.
- Add the Madras paste and fry for 1 min more, then tip in the cherry tomatoes and the chilli.
- Finely chop red onion, garlic, avocado, tomatoes and half the coriander and mix together.
- Add cumin and squeeze lime juice over salsa.
- Add the remaining coriander and eggs to the onion mixture and cook until egg has set stirring infrequently.
