Ingredients

  • 300g bread flour
  • 1 tsp instant yeast
  • 1 tsp salt
  • 1 tbsp olive oil
  • 2 tin tomatoes
  • Fresh basil
  • 4 cloves garlic
  • Chilli flakes
  • Cumin
  • Oregano
  • Parsley
  • Rosemary
  • Thyme
  • Mozzarella

Steps

  1. Put the flour into a large bowl, then stir in the yeast and salt.
  2. Make a well, pour in 200ml warm water and olive oil and mix with a wooden spoon until you have a soft, fairly wet dough.
  3. Turn onto a lightly floured surface and knead for 5 mins until smooth.
  4. Cover with a tea towel and set aside.
  5. In a pan cook the garlic until soft.
  6. Add the canned tomatoes, herbs, spices and some of the fresh basil.
  7. Preheat the oven to 220°C.
  8. If you’ve let the dough rise, give it a quick knead, then split into several balls.
  9. On a floured surface, roll out the dough into large rounds, about 25cm across, using a rolling pin.
  10. Lift the rounds onto two floured baking sheets.
  11. Smooth sauce over the base and add cheese. Bake in oven for 8 - 10 minutes or until crisp.
  12. Top with fresh basil.
