Honey sriracha sesame tofu

Ingredients

  • 2 tbsp sesame oil
  • 1 block tofu
  • 1 tbsp ginger
  • 6 cloves garlic
  • ⅓ cup soy sauce
  • ⅓ cup honey
  • 1 tbsp vinegar
  • 3 tbsp sriracha
  • 3 tbsp water
  • 1 tsp red chilli flakes
  • 1 courgette
  • 1 carrot
  • 1 red pepper
  • 1 green pepper
  • Pak choi
  • 1 ¼ cups rice

Steps

  1. Drain and press the tofu.
  2. Cook drained and sliced tofu until brown, remove from pan.
  3. Cook the rice.
  4. Add ginger and garlic into pan and cook until softened.
  5. Add the carrot, green pepper, red pepper, courgette and pak choi stalks in that order.
  6. Mix together the soy sauce, vinegar, honey, Sriracha, red chilli flakes and water.
  7. Pour the sauce over the vegetables and cook until sauce has thickened.
  8. Add pak choi leaves in and mix until cooked.
