Ingredients

  • 1 onion
  • 1 red pepper
  • 1 green pepper
  • 1 bag of spinach
  • 6 cloves garlic
  • 2 cans tomatoes
  • Fresh basil
  • Chilli flakes
  • Cumin
  • Oregano
  • Parsley
  • Rosemary
  • Thyme
  • Mozzarella
  • 2 packets gnocchi
  • 1 red chilli
  • 1 tsp brown sugar

Steps

  1. Preheat oven to 180°C and line the casserole dish.
  2. In the wok cook the onion, once cooked add the garlic and chilli.
  3. Add the green pepper then the red pepper until cooked.
  4. Add the canned tomatoes and the herbs and spices, simmer for 10 minutes.
  5. Cook the gnocchi as per packet instructions.
  6. Stir the spinach and fresh basil into the wok, once cooked add the gnocchi and remove from heat.
  7. Transfer to the casserole dish and sprinkle half the mozzarella on top.
  8. Bake uncovered in the oven for 10 minutes. Sprinkle with basil and fancy mozzarella.
