Gnocchi
Ingredients
- 1 onion
- 1 red pepper
- 1 green pepper
- 1 bag of spinach
- 6 cloves garlic
- 2 cans tomatoes
- Fresh basil
- Chilli flakes
- Cumin
- Oregano
- Parsley
- Rosemary
- Thyme
- Mozzarella
- 2 packets gnocchi
- 1 red chilli
- 1 tsp brown sugar
Steps
- Preheat oven to 180°C and line the casserole dish.
- In the wok cook the onion, once cooked add the garlic and chilli.
- Add the green pepper then the red pepper until cooked.
- Add the canned tomatoes and the herbs and spices, simmer for 10 minutes.
- Cook the gnocchi as per packet instructions.
- Stir the spinach and fresh basil into the wok, once cooked add the gnocchi and remove from heat.
- Transfer to the casserole dish and sprinkle half the mozzarella on top.
- Bake uncovered in the oven for 10 minutes. Sprinkle with basil and fancy mozzarella.
