Enchilada sauce
Ingredients
- 3 tbsp olive oil
- 3 tbsp flour
- 1 tbsp ground chilli powder
- 1 tsp ground cumin
- ½ tsp garlic powder
- ¼ tsp dried oregano
- ¼ tsp salt, to taste
- Pinch of cinnamon
- 2 tbsp tomato paste
- 2 cups vegetable broth
- 1 tsp apple cider vinegar
Steps
- Measure the dry ingredients into a small bowl and place it near the stove.
- In a pot warm the oil until it’s it’s hot enough that a light sprinkle of the flour/spice mixture sizzles on contact.
- Once it’s ready, pour in the flour and spice mixture while whisking constantly.
- After a minute add the tomato paste then slowly add the stock, whisking away any lumps.
- Simmer until thickened then take off heat and stir in the vinegar, salt and pepper.
