Ingredients

  • 6 sausages with casings removed
  • 6 vegan sausages
  • 6 cloves garlic
  • Chilli flakes
  • 2 tins tomatoes
  • 3 cups water
  • Penne
  • ½ cup cream
  • ¾ cup grated hard cheese
  • ½ cup chopped basil
  • ½ cup grated mozzarella
  • Fancy mozzarella

Steps

  1. Preheat oven to 180°C and line the casserole dish.
  2. In the wok cook the sausages and break into pieces. Add the garlic and chilli flakes.
  3. Once garlic is cooked add the canned tomatoes and simmer.
  4. Add the water and penne, simmer until pasta is cooked. Remove from heat.
  5. Stir in the cream, ½ cup of the Parmesan, and 3 tablespoons of the basil.
  6. Transfer to the casserole dish and sprinkle the mozzarella and remaining ¼ cup Parmesan on top.
  7. Bake uncovered in the oven for 10 minutes. Sprinkle with remaining basil and fancy mozzarella.
