Ingredients

  • 1 block tofu
  • 1 diced kumara
  • 4 diced plantains
  • 1 sliced onion
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 can black beans
  • Rice
  • 1 ripe mango
  • 1 lime
  • 2 scallions, sliced
  • ¼ cup olive oil
  • ¼ cup fresh orange juice
  • 1 tsp orange zest
  • 2 tsp soy sauce
  • 2 tsp maple syrup
  • 5 garlic cloves
  • 1 tsp allspice
  • ½ tsp cumin
  • ½ tsp chilli powder
  • ¼ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ tsp cayenne

Steps

  1. Drain and press the tofu.
  2. Preheat oven to 200°C.
  3. Place marinade ingredients (everything olive oil and on) in a blender and blend until smooth.
  4. Place tofu on baking tray and season with salt and pepper.
  5. Coat both sides of the sliced tofu in some of the marinade.
  6. On another sheet place the vegetables and lightly brush with the marinade.
  7. Bake in oven for 20 minutes, flipping the vegetables and tofu halfway.
  8. Cook the rice.
  9. In a small pot cook the garlic then add the black beans and cumin. Heat thoroughly.
