Caribbean island bowl
Ingredients
- 1 block tofu
- 1 diced kumara
- 4 diced plantains
- 1 sliced onion
- 1 red bell pepper
- 1 orange bell pepper
- 1 can black beans
- Rice
- 1 ripe mango
- 1 lime
- 2 scallions, sliced
- ¼ cup olive oil
- ¼ cup fresh orange juice
- 1 tsp orange zest
- 2 tsp soy sauce
- 2 tsp maple syrup
- 5 garlic cloves
- 1 tsp allspice
- ½ tsp cumin
- ½ tsp chilli powder
- ¼ tsp cinnamon
- ¼ tsp nutmeg
- ½ tsp cayenne
Steps
- Drain and press the tofu.
- Preheat oven to 200°C.
- Place marinade ingredients (everything olive oil and on) in a blender and blend until smooth.
- Place tofu on baking tray and season with salt and pepper.
- Coat both sides of the sliced tofu in some of the marinade.
- On another sheet place the vegetables and lightly brush with the marinade.
- Bake in oven for 20 minutes, flipping the vegetables and tofu halfway.
- Cook the rice.
- In a small pot cook the garlic then add the black beans and cumin. Heat thoroughly.
