Ingredients

  • 450g mushrooms
  • 2 shallots
  • 5 garlic cloves, minced
  • 1 tbsp soy sauce
  • 1 cup veggie stock
  • 1 tsp miso paste
  • 1 tbsp vegan worcestershire
  • ¼ cup vegan butter
  • Thyme sprigs
  • 2 tbsp nooch

Steps

  1. Roughly chop the mushrooms and shallots, into a large dice.
  2. In two dry pans add half of the mushrooms to each. Bring the heat to medium and stir occasionally.
  3. Once the mushrooms have released all their water add a little oil and the shallots. Stir to coat and cook until the shallots have softened.
  4. Add the garlic, cook until fragrant. Then add the stock, soy sauce, miso paste, worcestershire and thyme. Cook and reduce until the stock has bee absorbed.
  5. Remove the thyme then add mixture to a food processor with the butter and process until smooth. Mix in the nooch then taste and season.
