Mushroom pâté
Ingredients
- 450g mushrooms
- 2 shallots
- 5 garlic cloves, minced
- 1 tbsp soy sauce
- 1 cup veggie stock
- 1 tsp miso paste
- 1 tbsp vegan worcestershire
- ¼ cup vegan butter
- Thyme sprigs
- 2 tbsp nooch
Steps
- Roughly chop the mushrooms and shallots, into a large dice.
- In two dry pans add half of the mushrooms to each. Bring the heat to medium and stir occasionally.
- Once the mushrooms have released all their water add a little oil and the shallots. Stir to coat and cook until the shallots have softened.
- Add the garlic, cook until fragrant. Then add the stock, soy sauce, miso paste, worcestershire and thyme. Cook and reduce until the stock has bee absorbed.
- Remove the thyme then add mixture to a food processor with the butter and process until smooth. Mix in the nooch then taste and season.
