Ingredients

  • ½ pear, grated
  • 5 tbsp gochujang
  • 3 tbsp rice vinegar
  • 3 tbsp sugar
  • 1 tbsp soy sauce
  • 3 garlic cloves, minced
  • 1 tbsp sesame oil
  • 1 tbsp toasted sesame seeds
  • 250g soba noodles
  • 1 cucumber, julienned
  • ½ cup kimchi
  • 8 leaves lettuce, thinly sliced
  • 2 tbsp chopped spring onions
  • ½ cup diced red onion
  • ½ cup small diced carrot

Steps

  1. Mix ingredients from pear to sesame seeds for the sauce and place in the fridge to chill.
  2. Prepare the vegetables by slicing them and keep in the fridge to cool.
  3. Bring a pot of water to a boil and cook soba noodles according to the package instructions.
  4. Drain and shock in cold water to stop the cooking process. Drain and rinse with cold water.
  5. Place the noodles in the middle of a shallow bowl and add toppings. Pour over the sauce.
