Bibim Guksu
Ingredients
- ½ pear, grated
- 5 tbsp gochujang
- 3 tbsp rice vinegar
- 3 tbsp sugar
- 1 tbsp soy sauce
- 3 garlic cloves, minced
- 1 tbsp sesame oil
- 1 tbsp toasted sesame seeds
- 250g soba noodles
- 1 cucumber, julienned
- ½ cup kimchi
- 8 leaves lettuce, thinly sliced
- 2 tbsp chopped spring onions
- ½ cup diced red onion
- ½ cup small diced carrot
Steps
- Mix ingredients from pear to sesame seeds for the sauce and place in the fridge to chill.
- Prepare the vegetables by slicing them and keep in the fridge to cool.
- Bring a pot of water to a boil and cook soba noodles according to the package instructions.
- Drain and shock in cold water to stop the cooking process. Drain and rinse with cold water.
- Place the noodles in the middle of a shallow bowl and add toppings. Pour over the sauce.
