Courgette banchan
Ingredients
- 1 tbsp vegetable oil
- 1 tbsp minced garlic
- 2 courgettes, julienned
- 1 tbsp soy sauce
- 2 tbsp chopped scallion greens
- 1 tsp toasted sesame oil
- 1 tsp black pepper
- 1 tbsp toasted sesame seeds
- 1 tsp toasted sesame oil
Steps
- In a large bowl add the courgette and sprinkle with salt, rub with your hands to coat. Set it aside for about 20 minutes.
- Add oil to the wok over medium heat. When the oil begins to shimmer add the garlic and cook until fragrant.
- Add zucchini and stir-fry for about 2 to 3 minutes, until the zucchini begins to soften.
- Add soy sauce, scallion greens, and sesame oil and toss a couple times, until zucchini is evenly coated. Remove from heat.
- Garnish with black pepper and toasted sesame seeds. Drizzle with sesame oil.
