Ingredients

  • 250g wheat noodles
  • 2 blocks silken tofu
  • 1 tsp salt
  • 1 tbsp peanut butter
  • ½ cup soy milk
  • 1 tbsp crushed sesame seeds
  • 1 small cucumber, julienned

Steps

  1. Bring a large pot of water to a boil over medium high heat. Add the noodles and cook according to package instructions.
  2. Mix tofu, salt, peanut butter, soy milk and sesame seeds in the blender and blend until smooth. Adding more soy milk if needed.
  3. Once noodles are cooked drain the water and rinse under cold water.
  4. Add noodles to a bowl along with a few ice cubes. Pour over the soy milk mixture. Garnish with cucumber and sesame seeds.
