Kongguksu
Ingredients
- 250g wheat noodles
- 2 blocks silken tofu
- 1 tsp salt
- 1 tbsp peanut butter
- ½ cup soy milk
- 1 tbsp crushed sesame seeds
- 1 small cucumber, julienned
Steps
- Bring a large pot of water to a boil over medium high heat. Add the noodles and cook according to package instructions.
- Mix tofu, salt, peanut butter, soy milk and sesame seeds in the blender and blend until smooth. Adding more soy milk if needed.
- Once noodles are cooked drain the water and rinse under cold water.
- Add noodles to a bowl along with a few ice cubes. Pour over the soy milk mixture. Garnish with cucumber and sesame seeds.
