Cabbage and caramelised onion spaghetti
Ingredients
- 5 tbsp rapeseed oil
- 400g shallots, finely sliced
- 2 tsp salt
- 300g dried spaghetti
- 5 garlic cloves, finely sliced
- 1 sweetheart cabbage, finely shredded
- 3 tbsp Shaoxing wine
- 1 tbsp light soy sauce
- 1 tbsp miso paste
- 2 tsp toasted sesame oil
- 1 tsp caster sugar
- Juice of ½ lemon
- Crispy onions
Steps
- Put the oil in a wide pan on medium heat. Once hot add the shallots and half a teaspoon salt and cook gently, stirring, until very jammy and caramelised.
- Meanwhile bring water to a boil in the pasta pot and season with remaining salt. Cook spaghetti according to package instructions. Reserve a cup of pasta water.
- Stir the garlic into the shallots and cook until fragrant. Add the cabbage and four tablespoons of pasta water. Mix well then cover and leave to cook for five minutes.
- Once the cabbage is wilted stir in the shaoxing wine, soy sauce, miso paste, sesame oil, lemon juice and sugar.
- Add the spaghetti and mix well add a splash of pasta water if needed. Take off the heat, divide into four bowls and top with crispy onions.
