Huevos rotos
Ingredients
- 1 kumara
- 2 white potatoes
- 4 shallots, quartered
- ½ tsp cumin
- ½ tsp garlic powder
- Butter
- 2 eggs
- Pickled red onions
- Parsley, chopped
Steps
- Preheat the oven to 200°C.
- Cut the potatoes and kumara into 1cm cubes. Put the white potato into cold water for a few minutes then rinse and dry thoroughly.
- Add to an oven dish with the shallots, cumin and garlic powder. Drizzle with olive oil and toss to coat. Roast for 20 minutes, mixing halfway.
- Heat a tablespoon of olive oil in the frying pan over medium high heat. Add the eggs and cook for a few minutes.
- Remove the potatoes from the oven, divide between plates, add the egg on top and break the yolk.
- Top with pickled red onion, parsley and finish with flaky salt and freshly ground black pepper.
