Ingredients

  • 1 kumara
  • 2 white potatoes
  • 4 shallots, quartered
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Butter
  • 2 eggs
  • Pickled red onions
  • Parsley, chopped

Steps

  1. Preheat the oven to 200°C.
  2. Cut the potatoes and kumara into 1cm cubes. Put the white potato into cold water for a few minutes then rinse and dry thoroughly.
  3. Add to an oven dish with the shallots, cumin and garlic powder. Drizzle with olive oil and toss to coat. Roast for 20 minutes, mixing halfway.
  4. Heat a tablespoon of olive oil in the frying pan over medium high heat. Add the eggs and cook for a few minutes.
  5. Remove the potatoes from the oven, divide between plates, add the egg on top and break the yolk.
  6. Top with pickled red onion, parsley and finish with flaky salt and freshly ground black pepper.
