Ingredients

  • 280g spinach
  • 30g basil
  • ½ cup green peas, boiled
  • ¾ cup soy milk
  • 3 tbsp nooch
  • 1 block tofu
  • 2 tbsp light soy sauce
  • 2 tsp smoked paprika
  • 2 tsp dried oregano
  • 2 tsp dried thyme
  • 2 tsp olive oil
  • 1 tsp black pepper
  • 2 tbsp olive oil
  • 6 cloves garlic, sliced
  • 1 red onion, chopped
  • ¾ cup pasta water
  • Pasta

Steps

  1. Drain and press the tofu. Once done pat dry with a paper towel and cut into four fillets.
  2. In a large bowl mix ingredients from soy sauce to black pepper. Add the tofu fillets and coat. Leave to marinate for at least five minutes.
  3. Meanwhile heat a pot of salted water. Once boiling add the spinach and cook until bright green. Transfer to an ice bath.
  4. Repeat with the basil. Then add the peas, once bright green drain.
  5. Add spinach, basil and peas to a blender with milk and nooch. Blend until smooth then season with salt and pepper to taste.
  6. Heat olive oil in a frying pan. Once hot add the tofu fillets and cook until golden on both sides. Set aside.
  7. In the same pan add the onion, cook until softened. Add the garlic and cook until fragrant.
  8. Add in the sauce and some pasta water followed by the cooked pasta. Cook until heated through.
  9. Divide the pasta between four bowls and top with the tofu fillet.
