Green pasta
Ingredients
- 280g spinach
- 30g basil
- ½ cup green peas, boiled
- ¾ cup soy milk
- 3 tbsp nooch
- 1 block tofu
- 2 tbsp light soy sauce
- 2 tsp smoked paprika
- 2 tsp dried oregano
- 2 tsp dried thyme
- 2 tsp olive oil
- 1 tsp black pepper
- 2 tbsp olive oil
- 6 cloves garlic, sliced
- 1 red onion, chopped
- ¾ cup pasta water

Steps
- Drain and press the tofu. Once done pat dry with a paper towel and cut into four fillets.
- In a large bowl mix ingredients from soy sauce to black pepper. Add the tofu fillets and coat. Leave to marinate for at least five minutes.
- Meanwhile heat a pot of salted water. Once boiling add the spinach and cook until bright green. Transfer to an ice bath.
- Repeat with the basil. Then add the peas, once bright green drain.
- Add spinach, basil and peas to a blender with milk and nooch. Blend until smooth then season with salt and pepper to taste.
- Heat olive oil in a frying pan. Once hot add the tofu fillets and cook until golden on both sides. Set aside.
- In the same pan add the onion, cook until softened. Add the garlic and cook until fragrant.
- Add in the sauce and some pasta water followed by the cooked pasta. Cook until heated through.
- Divide the pasta between four bowls and top with the tofu fillet.
