Ingredients

  • 320g pumpkin purée
  • 80g apple sauce
  • 2 tbsp ground flaxseed
  • 2 tbsp maple syrup
  • 1 tsp vanilla essence
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • ¼ tsp ground ginger
  • ¼ tsp ground cloves
  • 80ml plant milk
  • 180g wholemeal flour
  • 80g rolled oats
  • 1 tsp bicarbonate of soda
  • ½ tsp baking powder

Steps

  1. Preheat the oven to 180°C and line a loaf tin with baking parchment.
  2. In a large bowl mix pumpkin purée, apple sauce, flaxseed, maple syrup, vanilla and spices until fully combined.
  3. Add milk and mix until combined. Add flour, oats, bicarb and baking powder and fold in until just combined.
  4. Add to a loaf tin and bake for 45-60 mins or until golden on top.
