Pumpkin breakfast bread
Ingredients
- 320g pumpkin purée
- 80g apple sauce
- 2 tbsp ground flaxseed
- 2 tbsp maple syrup
- 1 tsp vanilla essence
- 1 tsp cinnamon
- ¼ tsp nutmeg
- ¼ tsp ground ginger
- ¼ tsp ground cloves
- 80ml plant milk
- 180g wholemeal flour
- 80g rolled oats
- 1 tsp bicarbonate of soda
- ½ tsp baking powder
Steps
- Preheat the oven to 180°C and line a loaf tin with baking parchment.
- In a large bowl mix pumpkin purée, apple sauce, flaxseed, maple syrup, vanilla and spices until fully combined.
- Add milk and mix until combined. Add flour, oats, bicarb and baking powder and fold in until just combined.
- Add to a loaf tin and bake for 45-60 mins or until golden on top.
