Raita
Ingredients
- ¾ cup coconut yogurt
- ½ cup cucumber, grated
- 1 clove garlic, minced
- 1 tbsp finely chopped red onion
- 2 tsp lemon juice
- 1 tbsp olive oil
- ½ tsp cumin
- ½ teaspoon coriander
- 3 tbsp mint, chopped
- 3 tbsp coriander, chopped
- ¼ tsp salt
- ¼ tsp pepper
Steps
- Place all ingredients in a bowl and stir. Refrigerate until ready to use.
