Tandoori paste
Ingredients
- 2 tsp cumin seeds
- 2 tsp coriander seeds
- 2 tsp mustard seeds
- 6 green cardamom pods
- 10 cloves
- 2 tsp garam masala
- 1 tsp ground turmeric
- 1 tsp cinnamon
- 1 tsp kashmiri chilli powder
- 1 tsp paprika
- 1 tsp dried fenugreek
- 1 tsp black pepper
- 1 tsp salt
- 2 tsp brown sugar
- ½ small onion, finely chopped
- 4 tbsp tomato paste
- 3 tbsp ginger paste
- 5 tbsp garlic paste
- 2 green chillies, finely chopped
- Juice of 1 lemon
- 2 tbsp neutral oil
Steps
- Toast the cumin seeds, coriander seeds, mustard seeds, and cardamom seeds in a dry pan over medium heat until aromatic and popping.
- Transfer the toasted spices to a mortar and pestle or spice grinder and grind to a fine powder.
- Mix in the remaining ground spices: ground coriander, garam masala, cinnamon, turmeric, chilli powder, paprika and black pepper.
- In a bowl mix the onion, ginger, garlic and chillies. Add the dried spice mix.
- Stir in the sugar, tomato paste, lime juice, oil, and salt.
- Blend all ingredients together until a paste forms. If using fenugreek, crush it between your palms and mix it in.
