Ingredients

  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 2 tsp mustard seeds
  • 6 green cardamom pods
  • 10 cloves
  • 2 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp cinnamon
  • 1 tsp kashmiri chilli powder
  • 1 tsp paprika
  • 1 tsp dried fenugreek
  • 1 tsp black pepper
  • 1 tsp salt
  • 2 tsp brown sugar
  • ½ small onion, finely chopped
  • 4 tbsp tomato paste
  • 3 tbsp ginger paste
  • 5 tbsp garlic paste
  • 2 green chillies, finely chopped
  • Juice of 1 lemon
  • 2 tbsp neutral oil

Steps

  1. Toast the cumin seeds, coriander seeds, mustard seeds, and cardamom seeds in a dry pan over medium heat until aromatic and popping.
  2. Transfer the toasted spices to a mortar and pestle or spice grinder and grind to a fine powder.
  3. Mix in the remaining ground spices: ground coriander, garam masala, cinnamon, turmeric, chilli powder, paprika and black pepper.
  4. In a bowl mix the onion, ginger, garlic and chillies. Add the dried spice mix.
  5. Stir in the sugar, tomato paste, lime juice, oil, and salt.
  6. Blend all ingredients together until a paste forms. If using fenugreek, crush it between your palms and mix it in.
